Amadeo

Since 1942, Amadeo has been here in Cascorro, at the heart of Madrid’s Rastro. Now 97, he has spent a lifetime behind the bar, still greeting every person who walks through the door with a “come in, my friend” or a simple “how are you?”

Generations have passed through his doors: children who now return as parents, grandparents and even great-grandparents.

Snails are the house speciality. The recipe came from Burgos, from his mother, and has been perfected over the years: good ingredients, a rich sauce, a touch of spice, and plenty of bread to make sure not a drop is left behind. Amadeo’s advice is simple: “Dip your bread, dip your bread.” But he knows a good plate of snails is only part of the story.

What really matters, he says, is putting “soul, heart and life” into what you do. Feeding people well. Looking after them even better. Making sure everyone who walks in leaves happy. Because before we are thought, we are feeling. And it’s the human touch—the conversation, the joke, the greeting—that brings people back, often with their own families in tow.

After all these years, his secret remains simple: love what you do, treat people with respect, be grateful, and never let your guard down.

The snails bring people through the door. Amadeo is what makes them come back.
